Happy Thanksgiving!

          
Wishing everybody a Happy Thanksgiving! I'm thankful for so much-- family and friends, kindness of others, good food and Chocolate Meringue Pie!! I could skip the turkey and just eat the pie. We're going to Jim's parents today. I'm taking the dressing, cheesy green bean casserole, fresh green beans, my mom's apple salad, and strawberry spinach salad. Can't forget the honey butter.

Mom's Apple Salad
apples--grated (but this year I'm going to try chunks instead)
whip cream--we use the spray can
pecans
marshmallows

Throw it in a bowl and serve. I love it, I was a picky eater as a child and I knew if this was at the holiday meal everything would be wonderful. Now it's makes me feel that something about my mom is at dinner with us.

She also made a wonderful green rice and that is what everybody wanted to make sure she brought to family dinners. I use to make it on Thanksgiving but now just make it for Christmas, there was too much starch.

Green Rice Casserole2 cups of cooked rice
1 lb Velveeta, cubed
1 can cream of mushroom soup
10 oz chopped broccoli  cooked
1/2 chopped onion
2 eggs
1/4 oil
2/3 cup milk
Mix well.  Bake at 350  for  1.5 hours

My mom used instant rice but I used regular rice, I also tried to make it healthier, but it never tasted the same, so I went back to her recipe. I do make my own condensed soup instead of using canned soup.  

Green Bean Casserole
2 cans french style green beans, drained
1 can cream of mushroom soup--- (I make my condensed soup) it taste better and less salty
2 tbsp butter 
1 tbsp flour
1/2 cup milk
1/2 onion minced 
1 cup of shredded cheese
pepper and salt to taste

Butter a 2 quart casserole dish. Drain beans and pour in dish. In a small saucepan, melt butter, blend  in flour and gradually  add milk. Cook over low heat till  until is bubbly  and thick, stir constantly. Add onion,cheese and can of soup. Pour sauce over beans and bake for 45 minutes. 

The green bean recipe is one I played around with after reading a recipe in a old farm cookbook and we tweaked it and almost everybody loves it. I was not going to make it this year and just go with fresh green beans until Kaitlyn said Mom you always make those.
